Tomato-Rosemary Dinner Salad
Tomato-Rosemary Dinner Salad This is such an easy salad to make and we use the most delicious yellow and red heirloom varieties that are super ripe, sweet and juicy that practically melt in our mouths! Fresh rosemary, parsley, pine nuts, and garlic, complement the flavor of the tomatoes beautifully, and make this an enticing and exquisite dish to enjoy any day—or to serve to guests for special occasions.

For a more filling dinner, serve with pumpkin seed patties or a big bowl of your favorite greens.

Ingredients: Serves 2 as a whole meal, or 4 as a side salad
3-4 cups Heirloom tomatoes, diced
2 tablespoons green onion, finely sliced
2 tablespoons pine nuts
1 tablespoon parsley leaves, minced
1 tablespoon rosemary leaves, minced
1 clove garlic, pressed
1/4 teaspoon freshly cracked black pepper
Splash of Juniper Balsamic Vinegar, or your favorite dressing
Few shakes Himalayan salt, optional

The Little Story: Slow Food, Slow Change
Sometimes I think not much is happening, and then I realize a lot is happening! An example of this is the microgreens and sprouts we’ve begun growing that are now a part of our diet. There’s the discipline of tending and growing the food, learning how much we will actually eat, and how to use the sprouts and microgreens in existing, or new, recipes.

Tomatoes Sometimes I want a change to happen "now!", feeling so close to opening my petals like a bud in Spring, bursting and ready to unfold. Yet there’s a special sequence and timing to everything in life—the whisper of the wind, the calming of a gentle rain, the strength of the sun, the song of the birds, the birth of a child, the wisdom of DNA.

Often it takes time to let go of the past, to what has hurt us, and allow healing to come. Changing a diet can take time. Learning to love can take a lifetime. Mastering raw food may take years.

Big changes happen to me mostly through a slow and steady process. There may be a hundred small steps that need to take place before a big shift arrives. Every step feels important, and each one builds upon the previous one. There’s a "feeling" to this, a sense of knowing when it’s happening, that each step is being orchestrated by the highest power for my ultimate good—with the understanding that most things in life that are truly rewarding are worth the time and effort involved to attain them.

Food takes time to grow, like the luscious tomatoes and herbs in our Tomato Rosemary Salad, or these delightful little heirloom tomatoes, shown here. The beauty of these foods call out to me to be savored—to be eaten slowly, chewing well, taking in the flavors, textures, and nuances, as the life energy is transferred to my body.

How wonderful this is—the many gifts of love, consciousness, and the loving essence in living food.
